Culinary Classroom
Much like tequila, mezcal is an agave-based liquor primarily made in Oaxaca, Mexico. It is roasted in underground pits using different species of agave that, along with environmental and distillation factors, give variation to the final taste. Known for its smokiness, mezcal can be very nuanced, producing a variety of notes – floral, fruit, grass, tobacco… Mixologist Bianca Darby-Matteoda, who has visited numerous mezcalerias in Oaxaca, will lead an informative tasting in this interesting and delicious liquor. Participants will also enjoy paired bites prepared by local chef Trang Pham, including Mexican gyoza, elote salsa and various cheeses.
This is a Discovery Level class that is intended to introduce and excite those to a new art form.
