Work hands-on while learning about Navajo food ways from Upper Fruitland, New Mexico’s 2023 James Beard Award Finalist Chef Justin Pioche along with his mother and sister, who make up Pioche Food Group. Participants will cook a more advanced dish called “Textures of Squash” where squash is prepared up to nine different ways on the plate. Participants will also learn about the medicinal properties of squash and why it is important to the Navajo people.
