Join Mexican cheesemaker aficionado Lucia Farias and learn how to make two traditional, Mexican cheeses: Panela and Fresco, popular among farmers and homesteaders. While the recipes vary from town to town, these fresh cheese require no aging or fermentation. Panela and Fresco vary from each other in texture and saltiness, both have a mild flavor, and Panela is delicious grilled. All students will be able to take some cheese home with them!
