Join us for a celebratory kickoff to the Summer Season on Ah Haa’s Sky Deck! Black Salt Hospitality’s Chef Will Nolan will be firing up the grill for a classic Louisiana Boucheri. 

 

Roasted Porchetta – spice rubbed pork loin wrapped in crispy pork belly, salsa verde

Grilled Andouille Chicken Sausage – creole mustard, pepper jelly & white remoulade

Smoked slaw – green onion, cilantro, tortilla strips, creamy lime dressing

Sweet Corn Maque Choux – corn, okra, peppers, herbs, cream

LAUNCHPAD “CHAAT” DINNER
CHEF BIJOU THOMAS

Join Ah Haa for a multi-course and plated Indian themed “Chaat” dinner in the Launchpad by Chef Biju Thomas. According to Biju, “Chaat” is less a specific dish and more of a feeling you get with each bite. A joyful layering of textures and temperatures, a perfect bite will be slightly sweet, salty, crunchy, warm and cold, all at the same time – leaving you wanting more. From Pappadams and Samosas, to Jeweled Rice, Dal and Tandoori-spiced dishes, Chef Biju will combine South Asian flavors, spices and techniques with Colorado “frontier” ingredients. Selected wine pairings will accompany each course.

 

A professional chef known for light, simple dishes bursting with bold flavors, Chef Biju has designed the menus of many successful restaurants in Denver and Boulder, and launched his own restaurant, Biju’s Little Curry Shop, in Denver’s RiNo neighborhood. He now hosts “The Road Less Eaten,” an OutsideTV show that brings outdoor adventure-loving friends to their home towns in search of good times and their town’s best apres eats. Biju has been a chef for pro-cycling teams, and is co-author of The Feedzoone cookbooks. He recently relocated to the mountain biking mecca of Bentonville, Arkansas.
